PaloSanto becomes the first Mexican cuisine restaurant in Ibiza to receive this award.
PaloSanto restaurant, located in the heart of Las Dalias, Ibiza, has been honored with the prestigious Copil Seal for its excellence in Mexican gastronomy. This esteemed distinction, granted by the Casa de México Foundation in Spain in collaboration with the Mexican Academy of Gastronomy and the Mexican restaurant industry, highlights PaloSanto’s authentic Mexican cuisine, making it the first restaurant of its kind on the island to receive such an honor.
A tribute to tradition and innovation
Leading this culinary venture is Iker Llona, executive chef of PaloSanto, originally from Mexico and with solid training and experience across Europe. Iker, who has worked in renowned restaurants such as Le Gavroche (two Michelin stars) and the Ceviche Group in London, has masterfully fused advanced culinary techniques with traditional Mexican flavors on his menu, creating a truly unique sensory experience.
From his innovative guacamoles to a selection of fresh ceviches and wood-fired grilling that pays homage to ancestral cooking, PaloSanto has become a benchmark for modern Mexican gastronomy. It captures the essence of Mexican flavors while pushing them into new territories. The extensive selection of tequila and mezcal-based cocktails also invites diners to explore the roots of Mexican mixology.
